Another Excellent Sandwich

Another Excellent Sandwich

This recipe is from Three Many Cooks which is one of my favorite cooking blogs. Of course, I tweaked the recipe to suit my likes/dislikes. I made these a couple of weekends ago while my parents were visiting and we all really enjoyed them. Here’s my version:

Meatless Muffalettas

2 or so cloves garlic
1/4 cup capers
1 cup black olives
1 cup pimento-stuffed green olives
2 T. red wine vinegar
2 t. dried oregano
1/2 cup extra virgin olive oil

Mince the garlic and then capers in a food processor. Add the remaining ingredients and pulse to chop it up. This can be stored in the fridge for several weeks.

When you’re ready to assemble the sandwiches take the bread of your choice (even hoagie rolls will do– this from the bread snob known as Annie) and spread one side with olive salad. Top this with a couple of different cheeses (I used pepper jack and provolone — I think that sliced mozzarella would be good and I really would love to try it with fresh mozzarella, also). You should also add some quartered artichoke hearts and some red onion (if you like it). At this point you could go ahead and eat the sandwich but I suggest that you grill it in some olive oil.

I say.

I just got in from a busy morning/early afternoon and was staring into the fridge with no inspiration, whatsoever. I needed to eat something but I wanted something good. That’s when I spied some leftover red onions that I cooked a few days ago when I made fajitas.

Those onions on a sandwich grilled with cheese and some fresh tomato — yummy.

It shall be repeated again, and soon.

Hope that y’all are having a pleasant Wednesday though I’m at a loss as to determining how can it be Wednesday already.

The name of J’s new blog is Wacktopia. It is totally like him to be given a list of possibilities and then come up with something completely different. Part of me thinks that we should instead call it Grumpola because he’s just being so pleasant (not) about it.

Needless to say, the blog is still very rough and very much a work in progress. We have to work on the header and have been talking about what image to use, etc. I think that it is good for him to have to have these discussions, though. I think, too, that it will be good for him to do some writing for the blog.

The first thing he put on there is a snippet of the song, “Naughty Number Nine” from School House Rock. Y’all might remember it from Saturday morning cartoon time. It is just a 20-something second segment of the song. Here it is:
