This happened while I was in the kitchen making lunch the other day. C (my 5 year old): Grrrr (hilarious growling), grrrrGraaaaawl!!!!! Me: What are you doing, Honey? C: (very dramatically) GGGGGRRRRRrrrrrrr, Mom, oh no…..a porcupine….BEHIND YOU!!!! AAAAAGGGGGGGGHHHHH! Me: What? A porcupine behind me? I didn’t know that porcupines growl like that. Thanks for warning me. C: Um-hum. Then, a moment later. Me: C, Honey, you need to eat your apple slices before you leave the table, okay? C: Mom, do you know what apples are for? Me: No, what do you think that they are for? (Thinking that I have absolutely NO idea what he is going to say.) C: Apples are for cleaning the crumbs out of your teef. Me: You’re right….they do clean crumbs out of your teeth. I never know what he is thinking about or what he is going to say.

Remind me to add the career “butcher” to my long list of things that I never want to do for a living. I carved up the rest of my ham yesterday….and, well, let’s just say that I’m happy to be finished doing that. Here is an excellent recipe for ham leftovers. Crustless Savory Quiche 3 eggs 1 3 oz. package cream cheese 1 12 oz. carton small curd cottage cheese 1/4 cup butter, softened 1/4 cup all-purpose flour 1/2 t. baking powder 1/4 t. salt Pepper to taste 1/2 cup milk 1 cup grated cheddar cheese 1/2 cup cooked chopped ham 2 T. minced green onion 1/2 cup sliced fresh mushrooms (optional) 1. Preheat oven to 350 degrees. 2. Grease a 9 inch pie plate. Set aside. 3. In a large mixing bowl, beat egs. Beat in cream cheese, cottage cheese and butter until almost smooth. 4. In a small bowl, combine flour, baking powder, salt and pepper. Stir in egg mixture until thoroughly blended. Beat in milk. Pour into prepared pie plate. 5. Sprinkle with cheese and ham. Sprinkle with green onions and mushrooms. 6. Bake 30-40 minutes. (This quiche is good and very easy. I actually make the whole thing in my cuisinart and it turns out really well.) Happy eating!

Two young teenaged girls were having a lively discussion yesterday at church while waiting for their parents. I was sitting nearby with a sleeping baby…so I wasn’t trying to listen….but I did anyway. They were having an interesting discussion about time…. 1st girl: No, it has to be longer than five years. 2nd girl: (muffled)….five years. 1st girl: I’m telling you — it is way longer than five years! 2nd girl: (muffled…something about time) 1st girl: Look! There is no way that it can only be five years. Because Obi-wan is like 60 years old by the fourth episode and also Padme should have had the twins by….. Oh…a Star Wars discussion. Not really what I was expecting. Hoot.

We had a good day yesterday. It did seem a bit cold, for Easter, and sort of a gloomy day here in St. Louis with rain and clouds. Baby E was sort of content in the worship service, so I managed to stay through all the scripture readings. That was nice. Then, he took a nap on me during Sunday school — and he doesn’t really sleep in my arms much anymore — so that was a treat, as well. Our Easter dinner was fun. And I even had the energy to clean it all up last night…yeah! So I walked in to a clean kitchen this morning. :) The boys are off school for today and we are taking it easy. Jon might try to knock out his last language exam today…so hopefully he will be one step closer to his Ph.D. by this time tomorrow. Y’all have a good day.
