I bought my first pumpkin item since last fall. I saw that they had out their autumn stuff at Trader Joe’s — so I bought some pumpkin butter. Yummy. I’m looking for a really good pumpkin bread recipe…something healthy with maybe some flax seed and not too much sugar but plenty of spice and maybe some nuts and dried fruit. The search has begun. :) Meanwhile, let the pumpkin recipes begin! Haven’t tried these yet but I plan to try them soon. Pumpkin Pancakes INGREDIENTS: 2 cups all-purpose flour 3 tablespoons brown sugar 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon ground allspice 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon salt 1 1/2 cups milk (I would add more, I think.) 1 cup pumpkin puree 1 egg 2 tablespoons vegetable oil 2 tablespoons vinegar DIRECTIONS: In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I’m making red beans and rice for dinner tonight. I hope that the boys eat it. Maybe they will, maybe they won’t. Some of them liked the Italian sausage with peppers and polenta that I made last night. Jon liked it. I don’t know whether I liked it or not…my sinuses are all messed up and I can’t smell (or taste) anything right now. To add to that, I also don’t have much of a voice today. So Annie isn’t doing so well. Today, I’m also making a spice cake for Miss Liz’s birthday. I’m going to frost it with caramel frosting and it also has a blackberry jam layer, too. Hope that she likes it. Y’all take care and have a good day. I’ve got to get going around here.
