Electricity is a Lovely Thing

Electricity is a Lovely Thing
We have power back. I can’t believe it. Truly, I thought that I was going to have to bid farewell to my home of the last 10 years with the power still out. But, those folks at the power company really came through. So, I have one full day to finish packing. I’m really looking forward to it. Because, I’ll actually be able to SEE what I’m packing. To quote Jon, “It is just so amazing how light from the ceiling finds its way into the corners so well.” Flashlights and lanterns are great, but when you have to pack a basement….well, they just won’t do.

Another blessing, when the power comes back, he brings my servant girls with him. Funny how that works out. The Maytag twins are back, along with Whirlpool and the GE family. I sure do miss them when they are not working for me. Hope that they had a good vacation because, boy howdy, do I have a lot of stuff for them to do now.

Speaking of doing stuff, I should probably get to sleep. The next few days are going to be interesting and activity-filled. Y’all take care.

Packing, etc.
First off, I promise to not talk about packing for the 20 or so days left here. But I did have a pretty good idea today and I just thought that I’d share it. I thought of it today, when, after packing all of my china, pottery and other fragile items, I had run out of cushioning material(newspaper, plastic sacks, etc.) that I needed to pack that last box of wine glasses and other assorted stuff. That is when I spied the unopened pack of size 5 diapers that my son has outgrown. (There are little Barlows and big Barlows. He is a big one.) Anyway, I found that the diapers, when opened out, make great wrappers for wine glasses, small vases, sugar bowls and the like. I bet that you could even use the sticky tabs to make the glassware really secure in its little wrapping. I didn’t use the sticky tabs, however, and I was packing clean glasses in clean diapers in a brand new box, so, anyone who would like to have some free, size 5 diapers, just speak up. 🙂 They should be available about half-past August.

Because Nothing Fortifies You for Packing Like Pie

My strivings in the kitchen these days are to do as little as possible, preferably with what we have, so that I don’t have to take it with me or feel guilty about throwing it away. And, so, since I found a pie pastry in the freezer and since Granny Smith apples looked good at Sam’s and since my sweet, fun-to-cook-for 8 year old has been asking for it, we had apple pie. I know, seasonally, berry pie just says “middle of July” more than apple pie does. But he wanted apple and so apple he got. His daddy was happy about it, too.

Sour Cream Apple Pie

1 pie pastry, homemade or storebought works, too

Pie filling:
2 cups peeled, cored, sliced apples
3/4 cup sugar
2 T flour
1/2 t. salt
1 cup sour cream
1 egg, lightly beaten
1 t. vanilla extract

Topping:
1/3 cup sugar
1/3 cup flour
1 t. cinnamon
1/4 cup butter, softened

Preheat oven to 400 degrees.
Put pie pastry in pie plate. In a medium bowl, combine the ingredients for the pie filling in the order listed, stirring in between adding each ingredient to mix well. Pour the pie filling in the pastry.
Bake the pie at 400 for 15 minutes. After 15 minutes, lower the oven temperature to 325. Cover the pastry to prevent excessive browning of the crust. Bake for an additional 25-30 minutes. Meanwhile, stir the topping mixture together. After the pie has baked for the additional 25-30 minutes, take it out of the oven and carefully spread/sprinkle it with the topping. Return it to the oven for 10 minutes. Cool and eat.
