Because Nothing Fortifies You for Packing Like Pie

My strivings in the kitchen these days are to do as little as possible, preferably with what we have, so that I don’t have to take it with me or feel guilty about throwing it away. And, so, since I found a pie pastry in the freezer and since Granny Smith apples looked good at Sam’s and since my sweet, fun-to-cook-for 8 year old has been asking for it, we had apple pie. I know, seasonally, berry pie just says “middle of July” more than apple pie does. But he wanted apple and so apple he got. His daddy was happy about it, too.

Sour Cream Apple Pie

1 pie pastry, homemade or storebought works, too

Pie filling:
2 cups peeled, cored, sliced apples
3/4 cup sugar
2 T flour
1/2 t. salt
1 cup sour cream
1 egg, lightly beaten
1 t. vanilla extract

Topping:
1/3 cup sugar
1/3 cup flour
1 t. cinnamon
1/4 cup butter, softened

Preheat oven to 400 degrees.
Put pie pastry in pie plate. In a medium bowl, combine the ingredients for the pie filling in the order listed, stirring in between adding each ingredient to mix well. Pour the pie filling in the pastry.
Bake the pie at 400 for 15 minutes. After 15 minutes, lower the oven temperature to 325. Cover the pastry to prevent excessive browning of the crust. Bake for an additional 25-30 minutes. Meanwhile, stir the topping mixture together. After the pie has baked for the additional 25-30 minutes, take it out of the oven and carefully spread/sprinkle it with the topping. Return it to the oven for 10 minutes. Cool and eat.

Moving Wisdom

Moving Wisdom
The fact is that I have seen lots of moving over the last ten years. Being in a seminary community, I’ve seen more than my share, I do believe. But I haven’t done any actual moving of my own stuff. I’ve done no packing of any kind. So, I need your help. What wisdom do you have about moving? Packing? Keep in mind that I have the luxury of moving across town instead of across the country. Put it in the comment box, please, seriously, I need some help. I know where I want to end up…how do I get there from here? My dear friend, Kathleen, told me once that her motto for moving was, “Everything in a box”. And, she has moved a fair few times…so I’ll be taking her advice. Any more pointers? Bring it on. 🙂

I’m thinking

I’m thinking
….that leaving chocolate out on the kitchen counter because it is convenient just doesn’t say “Handling stress well” to me.
….that I would like to post a great entry about my grandmother who never raised her voice. That sort of thing isn’t passed on genetically as far as I can determine.
….that Annie is a grownup. At least her life and responsibilities would indicate this. This is a constant surprise to Annie.
….that dear old Spurge might need a home other than with us. Sniff.
….would anyone like to have a 11 year old boxer/lab mix?
….it is a good thing that the baby didn’t choke today on that tab top from the root beer can.
….it would have been embarassing to explain that one to the pediatrician since he has pulled this trick before.
….a lovely few minutes was had today courtesy of the little forgetful boy who left the root beer unattended. Thanks, son.
….miracles do happen.
….I love my little family.
….things will work out.
….beer is wonderful.
….my husband is a dear man to put up with me and get me lilies and watermelon at the grocery store.
….I need to get to bed.
….tomorrow is another day.
