Sorry about all of the food-related posts on here lately, y’all. I’m just on a food roll right now. And, as I’m sure that you can surmise from the title of this post, I’m going to talk about food again. 🙂

I’ve not yet made this cake mentioned on the lovely, Smitten Kitchen blog but I will. Oh, yes, I will.

Tyler Florence’s Pimento and Cheese

Tyler Florence’s Pimento and Cheese

I have a pimento and cheese recipe, several, in fact. But, you know, it is one of those elusive things. Every once in a while, I’ll try a new recipe just to be sure that I like mine the best.

This is the latest one that I tried. It is from Tyler Florence, who hales from South Carolina. You don’t have to be from the South to make wonderful pimento and cheese, of course. It was good. Next time I’ll reduce the mayo and see what I think. Oh, also, it needs Tabasco. Other than those modifications, though, it was pretty good and I liked the addition of the lemon juice. Serve on sandwiches or with crudites. Mix in or top it with some chopped, toasted pecans.

8 oz. cream cheese, softened
2 cups shredded sharp cheddar
1/2 cup pimento
1/2 cup mayo
juice of 1/2 lemon

Beat the cream cheese with a mixer until fluffy. Add the remaining ingredients and beat some more. Season to taste with kosher salt and cayenne.

Baked Cheese Grits

This is a great recipe to have in your collection. It is delightful with breakfast-y foods and is equally wonderful with some meat and vegetables for your dinner. The grits can be made ahead and reheated.

Ingredients:

6 cups water
1 1/2 cups Instant Grits (save your fancy grits for another day…use plain, cheap instant here)
1 t. salt

Cook the grits according to package directions. When they are done, add in:

3/4 stick of butter
2 + cups of grated sharp cheddar cheese

Stir the cheese and butter into the hot grits until melted and combined. Let the grits cool to luke warm.

Add:

3 beaten large eggs
3 shakes of garlic salt
6 shakes (or more, to taste) hot sauce
pepper to taste

Put it in a casserole dish and bake at 350 for 45-60 minutes.

Yummy!

Shopping Is Not My Favorite

Shopping Is Not My Favorite

thing, but, sometimes you have to do it.

Anyway, in the attempt to clothe my oldest son, I branched out from my normal Goodwill (although, I did go there, too) and visited Old Navy.

The purpose of this post is to tell you that all adult clothing, including clearance items, are 30 % off for today only. I think this includes internet, as well. So, if you are in need of clothing and like Old Navy, today would be an excellent day to scoot on over there and check some stuff out. I thought that they had some really pretty things in the ladies’ section. I didn’t buy anything, of course, but I could have if I was someone who does buy things.

That last sentence is wonky, but I’ve got to bake some bread, y’all.
