Baked Cheese Grits
This is a great recipe to have in your collection. It is delightful with breakfast-y foods and is equally wonderful with some meat and vegetables for your dinner. The grits can be made ahead and reheated.
Ingredients:
6 cups water
1 1/2 cups Instant Grits (save your fancy grits for another day…use plain, cheap instant here)
1 t. salt
Cook the grits according to package directions. When they are done, add in:
3/4 stick of butter
2 + cups of grated sharp cheddar cheese
Stir the cheese and butter into the hot grits until melted and combined. Let the grits cool to luke warm.
Add:
3 beaten large eggs
3 shakes of garlic salt
6 shakes (or more, to taste) hot sauce
pepper to taste
Put it in a casserole dish and bake at 350 for 45-60 minutes.
Yummy!
