Thanks, Y’all.

Thanks, Y’all.
I just wanted to thank everyone who gave me their 2 cents about my luncheon menu. Looks like we’re doing soup and salad. In fact, why don’t I just give y’all the menu here:

Tortilla Soup with garnish(s)
Loaded Baked Potato Soup with garnish(s)
Green Salad
Broccoli Salad
Assorted rolls and cornbread
Chocolate Desserts
Lemon Bars

I already have lots of people signed up to bring bread and desserts. Also, I have had people sign up to help all the other details of the event — like the set up, decorations, etc. And, can I just say that I love the folks at my church? When you ask for help — you get it.

The Best Chicken Marinade

The Best Chicken Marinade
I’m totally not kidding about this being the best chicken marinade, ever. We love it. You can also use it to marinate chicken for fajitas…..mmmmmm.

1/3 C. lime juice
4T. veg.oil
3 minced garlic cloves
1 T. Worchestershire sauce
1 1/2 T. brown sugar
1 t. salt
3/4 t. pepper
1 1/2 T. minced cilantro leaves (optional for you, never for us — even though I love it)

Mix this together in a small bowl. Take out 1/4 cup of the mixed marinade and set aside. Add another 1 t. salt to the remaining marinade and then pour it over 1 1/2 pounds chicken breasts/tenderloins. Marinate for 15 minutes in the refrigerator. Heat up a skillet and add some oil (or, you could heat up your grill but, you know, this is January), drain the marinade from the chicken and cook until done. When the chicken is finished cooking, let it rest for a few minutes then slice it into strips and toss with the reserved marinade.
