Summer Food Ideas

A few weeks ago, I asked y’all for ideas for summer foods and y’all had some great ones. Then I thought about summer and how I’d like to try some new things, have a good schedule of foods to give me a framework to start with, and not make my kitchen hot as all get out by running the oven.

Here’s what I’m going to do. First, I’m going to have a schedule for what we eat on a specific day.

For instance:

Mondays: Fish
Tuesday: Stir Fry or Panini
Wednesday: Main Course Salad
Thursday: Breakfast for dinner
Friday: Italian
Saturday: Something from this cookbook. (This will also provide leftover for Sunday lunch.)
Sunday (night): BLT’s (Barlow tradition)

I’m going to try lots of new things in these categories. For instance, I’ll be trying new bean and grain salads for salad night. I’ll be serving pasta dishes we’ve never eaten before and new bruschetta recipes, like this one for artichoke basil bruschetta and this one for leek toasts with blue cheese on Italian night. I want to serve fish at least once a week. So, this means that we’ll be having fish tacos and po’boys, of course, but we’ll also try some other quick cooking recipes, too. And, I’m going to be trying one recipe per week from Pam Anderson’s Perfect One Dish Dinners cookbook. Everything that I’ve made so far from this book has been great. The recipes are easy and make enough for Sunday lunch leftovers and that is a sure way to make my Sunday happy.

So, that’s it. Of course, you know that if I run across something wonderful that I’ll be sure to let you know.
