A Good Sandwich

A Good Sandwich

I don’t know about y’all, but to me, a good sandwich is right up there on my 10 favorite foods list. And, I’m always looking for new combinations to use in my paninis.

Here are some I want to try soon:

*6 Oz. Tuna, 2 T. capers, Avocado, fresh mozzarella, vinaigrette

*Goat cheese, chopped basil, oven-roasted tomatoes, marinated artichoke halves

*Grilled eggplant, red pepper-garlic mayo, thinly sliced roasted red pepper, Italian fontina

*Fried flounder, spicy coleslaw, ripe tomato

*Turkey, cherry tomato chutney, avocado, lime juice, fresh mozzarella cheese

*Grilled chicken, ricotta cheese and mango chutney

*6 oz. tuna, 1/3 c. mayo, 2 finely chopped scallions, 2 T. capers, 1 T. lemon juice, s and p, on rye with swiss or gruyere.

What is your favorite panini combination?

And now I’ve gone and made myself hungry.

An Astronaut

An Astronaut

was at my house recently.

This boy is funny. He wore this NASA jumpsuit the whole day. (Note the purse. His brothers call it a murse — for man purse. He doesn’t care, of course.) Wearing his NASA suit and carrying his murse he played all day long using an odd collection of toys.

A sampling:

Perhaps it was something about snakes on the shuttle, but why the skulls, and the pencils, and the magnifying glass with marble, where does the alligator fit in? You know what, I’ll never understand.

All I know is that the wheels in his head are always turning. The landscape between those ears is lush, I tell you.

He turned 7 recently. I was being silly the night before his birthday and said to him, “Well, E, after you turn seven tomorrow I’ll be all finished with having a six-year-old boys.” And, if I’m honest, I’d have to admit to sniffing (just a little) after making this statement. He was concerned. I quickly told him that, not to worry, that I was really happy that he was turning seven. He looked at me a minute and said, consolingly, “Don’t worry, Mom, I’ll always be six in my heart!”

Speaking of hearts, he’s stolen mine.
