I’m making this cake today for Jon’s birthday. Hope that it turns out well. One good thing about it is that our oldest son can eat it with us since it contains no wheat. I’m betting that the 5 year old won’t touch it. This, of course, means that he is crazy. Have a good Friday, y’all. And stop in barlowfarms and wish Jon a happy one if you are so inclined. Flourless Chocolate Cake Cake: 8 tablespoons unsalted butter 8 ounces semisweet chocolate 5 large eggs, room temp, seperated 3/4 cup sugar 2 teaspoons vanilla 1/2 teaspoon salt Icing: 8 ounces semisweet chocolate 1/2 cup cream Topping: raspberries whipped cream 6-8 servings 1 hour 4 minutes (24 mins prep) Preheat oven to 350. Grease 9″ springform pan with 1 Tbls. of butter, dust with cocoa. In metal bowl over double boiler, melt remaining butter and chocolate, remove from heat. Use mixer to beat yolks together with sugar and vanilla. Beat whites and salt together until stiff. Fold chocolate mixture into yolk mixture a little at a time. Fold in egg whites. Pour into springform pan. Bake 40 minutes until spongy. Remove from oven, remove springform, cool completely. When cake is cool, prepare icing. Mix together chocolate and cream over double boiler until smooth. Spread over cake. Top with raspberries and whipped cream.

Well, we are back from our trip to Birmingham. I would have written about it yesterday, but I didn’t get my act together. We are tired. Really tired. Yesterday morning, when I woke up at 15 til 8 (LATE), I had a hard time even putting one foot in front of the other. But, Jon and I are a good team, so we managed to get the boys fed, dressed, and off to school on time. Jon got me tulips yesterday. What a sweet man! Valentine’s day is sort of a funny holiday. Part of me would like to reject it and boycott the whole thing — but we didn’t boycott it. The boys had parties at school. And I received a candy necklace and a coupon for helping with the dishes from my 6 year old. Our trip to Birmingham went well. We packed it so full of activities and driving that it seemed like a month-long trip rather than a four day one. We stayed with a very gracious and hospitable family while in Birmingham. They were so sweet to us and our boys. Not only did they provide all sorts of food and great accomodations, the dad of the family actually found a pediatrician for us on Sunday morning. The baby had a bad ear infection and woke up with a fever of 102. It totally changed our Sunday to just be able to take the baby to his friend and get him checked out — rather than wait in an ER or clinic for hours. I like Birmingham. I love the hills. I like Vulcan. I like the shopping and the people. The traffic seems as bad as it is in St. Louis, though. We enjoyed seeing my dad. He has come a really long way. He played the piano for us. And he is communicating really well. Gross-motor-wise, he is doing well, too. He walked without a walker yesterday — that is a huge improvement. So now my mom is rapidly making changes in the house so that she can be ready when they release him from rehab. It is sort of scary for me..but I think that they could potentially send him home really soon. There is a lot to be done, on the house, though, so maybe they will keep him for at least another week, or maybe longer. If you are interested, you can look at checkonjoe.com later today. I apologize, once again, for my absence on this blog. I’ve been thinking about things that I could write about — but haven’t actually done any writing. We are going to visit my dad soon. I hope to see that he is much improved. My mom says that he is doing much better. Oh. But the road that he has yet to travel. It will be very, very long. We are not really thinking about the months to go…but are more just doing the “one day at a time” thing. I’m sure that is more healthy. And I’m not a good worrier. So I’m just going to wait and see and cheer him all the way. That is my strategy. My mom has had a rough day. (A rough few weeks, of course, but specifically a rough day today.) She had her purse stolen in the hospital. She knows that a stolen purse is nothing in the greater scheme of things, but it is frustrating, nevertheless. Bless her heart. Pray for her, please.
