We had a good day yesterday. It did seem a bit cold, for Easter, and sort of a gloomy day here in St. Louis with rain and clouds. Baby E was sort of content in the worship service, so I managed to stay through all the scripture readings. That was nice. Then, he took a nap on me during Sunday school — and he doesn’t really sleep in my arms much anymore — so that was a treat, as well. Our Easter dinner was fun. And I even had the energy to clean it all up last night…yeah! So I walked in to a clean kitchen this morning. :) The boys are off school for today and we are taking it easy. Jon might try to knock out his last language exam today…so hopefully he will be one step closer to his Ph.D. by this time tomorrow. Y’all have a good day.

Well, I’ve finally done it. I bought the first ham (of my life) to make for Easter supper. Usually I avoid buying a ham to make for holiday dinners by going with a grilled meat or BBQ — I know, so untraditional– instead. But, I finally decided that I needed to learn how to make a ham since I have a growing army to feed, etc. So, I bought a shank end half ham…and I’m planning on brining it for 24 hours and then baking it covered with a glaze that I got from my Barefoot Contessa cookbook. I really have no idea what I’m doing. I’ll let you know how it turns out. In addition to the ham (if it is edible), we are having cornbread dressing with bacon and pecans, pineapple gratin, roasted asparagus, and rolls. We shall see…..

These are great pancakes. The recipe looks simple. It is. It is worth making, too. Definitely better than a mix from a box…and better than other “homemade” pancakes that I’ve made before. 1 egg 1 C. flour 3/4-1 C. milk (more or less depending on how thick you like your pancakes) 2 T. butter, melted 1 T. sugar 1 T. baking powder 1/2 t. salt Beat egg until fluffy. Add milk and melted butter. Add dry ingredients. It is that simple. Happy pancake eating! Now I’ve gone and made myself hungry.

Well, I got most of my spring break goals accomplished. Still have to go through the clothes and gather stuff for the rummage sale. Still have to get Easter duds. Still have to paint my bathroom. Still have to help my neighbor shop for a rocker recliner. Still have lots of cooking to do. But all of that is fun stuff. I saved the fun stuff for last. Funny things the five year old has done lately: This is the boy who draws dozens of drawings in a sitting. He does the sound effects that go along with what he is drawing, too. For instance, the other day, he was drawing a series of pictures of a dog chasing a cat. In each drawing, the dog was getting closer and closer to the cat, the cat was getting more terrified, and the dog’s jaws and teeth were getting bigger and bigger. The whole time he was drawing the pictures, he was growling and doing the dialogue of the animals. The last picture in the series was just an up-close shot of the dog’s open mouth complete with the “swallow hole” — as he calls it. I thought that I wouldn’t be able to contain myself…that growling was hilarious. Then, the other day, the boys were watching “The Incredibles” with us. In the scene when Helen is flying the plane, I said something like, “Wow, don’t they have a cool Mom? She can fly a jet.” My 5 year old responded by saying (like it was nothing special), “Oh, you could do that.” I’m glad that he thinks so. He looked up from his drawing one day to say, “Mom, we need more caple.” What? “Son, could you say that again, I didn’t understand you.” C, again, “Mom, we need to get more caple. We don’t have enough. You know, Miss Liz has lots and LOTS of caple.” I said, “Oh, you mean cable. Like cable TV? Right?” He replied, “Uh-huh.” That boy.
