I want to win the HGTV Dream House this year. It is not even my style but I would LOVE, LOVE to win it. Sigh. There, I said it. Of course, we all know that Presbyterians don’t win stuff…..

This is recipe week. Well, not really, but there are a few that I want to share with you. This next one is actually one of those Once-A-Month kind of recipes, but it is also great to make and eat right away, too. It makes great use of leftover rice and chicken, and is really easy to put together. I suggest making it with homemade taco seasoning. (A recipe for taco seasoning follows the recipe for the casserole.) We like to spoon the casserole mixture into warmed tortillas. Top it with guacamole, sour cream, green onions or cilantro. Chicken Taco Casserole 2 cups cooked rice — brown 2 cups cooked chicken, shredded 1 (14 1/2 oz.) can tomato sauce 1 recipe homemade taco seasoning 1 (15-30 oz.) can refried beans 1 cup cheese, grated guacamole, sour cream, green onions, pico de gallo, chopped tomatoes, whatever you like on top of your tacos. Mix taco seasoning and tomato sauce. Add shredded chicken and coat it well with tomato mixture. Place cooked rice in the bottom of a 13 X 9 X 2. Top with chicken mixture. Top with 1-2 cans of refried beans so you have a nice even coating. (This step is easier if you warm the refried beans for a bit in the microwave.) Top with cheese. (You can freeze the casserole at this point.) Bake uncovered for 30 to 45 minutes at 350F or until hot all the way through and the cheese is nice and bubbly. You may have to bake it longer if you heat it from frozen. Top with your favorite toppings and eat it with tortillas or with tortilla chips. Homemade Taco Seasoning 1 tbsp. chili powder 1 tsp. ground cumin 1 tsp. paprika 1 tsp. garlic powder 1 tsp. ground oregano 1 tsp. sugar 1/2 tsp. salt Mix in small bowl. (This is equal to 1 1/4 ounce package of commercial taco seasoning.)

Annie’s Red Beans (and Rice) This is a recipe that I came up with last week. When Jon declared it the best red beans he had ever had, I knew that I had to blog it. 3 cans red beans (you could use kidney in a pinch) 1 large yellow onion chopped (about 1 cup) 2 stalks celery, chopped 1/2 large green bell pepper, chopped (I chop the whole thing and freeze half for later.) 2 cloved garlic, minced 1 t. salt 1 1/2 t. thyme 1 1/2 t. oregano 3/4 t. garlic powder 1/8 t. cayenne pepper 2 bay leaves 1/2 to 2/3 lbs. smoked sausage, cut into 1/2 inch pieces (Conecuh brand is great.) Cooked brown rice In a large Dutch oven, saute onion, bell pepper, and celery in 1-2 T. canola or vegetable oil. Cook for 5 minutes or so, stirring occasionally until onions soften. Then, add the sausage. Cook for 4-5 minutes longer or until sausage is starting to brown a little. Add the garlic and cook for 30 seconds to a minute. Then add the salt and seasonings and stir it all for 30 seconds. Add the beans just enough water to cover. Stir. Allow it to simmer for 30 minutes or until it reaches desired consistency. (I cooked mine longer because I like a thicker texture.) Don’t forget to stir it occasionally. Serve it with the brown rice and some French bread. And, be prepared for your house to smell like a great Creole restaurant. :)
