It is really yummy and economical to make, since all the ingredients are usually on sale this time of year.  I particularly like making brittles because they require very little attention.  The only thing is that you have to make it on a day when it isn&#8217;t raining\/snowing outside.<\/p>\n<p>Pecan Spice Brittle<\/p>\n<p>1 cup sugar<br \/>\n1\/2 cup butter<br \/>\n1\/2 cup light corn syrup<br \/>\n1\/2 cup water<br \/>\n1 t. baking soda<br \/>\n1 cup chopped pecans<br \/>\n1 t. ground cinnamon<\/p>\n<p>Lightly coat large baking sheet with butter; set aside. In heavy 2-quart saucepan, combine sugar, butter, corn syrup, and water.  Cook over medium heat stirring occasionally until sugar is dissolved and mixture comes to full boil, about 4-9 minutes. Brush insides of pan with pastry brush dipped in water to dissolve any sugar crystals. Cook stirring occasionally, until candy thermometer registers 300 degrees F., about 10-18 minutes. Remove from heat.  Working quickly, stir in baking soda (mixture will foam); stir in pecans and cinnamon. Immediately pour mixture onto prepared baking sheet, spreading evenly to 1\/8-1\/4 inch thickness.  Cool compleately.  Break into pieces.  Store in airtight container.
