{"id":1910,"date":"2013-02-08T18:16:42","date_gmt":"2013-02-08T18:16:42","guid":{"rendered":"http:\/\/www.annbarlow.com\/?p=1910"},"modified":"2013-02-08T18:16:42","modified_gmt":"2013-02-08T18:16:42","slug":"farro-salad","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1910","title":{"rendered":"Farro Salad"},"content":{"rendered":"<p>This is the salad that I promised, like, two weeks ago. \u00a0I&#8217;m sorry to be so tardy.<\/p>\n<p><a href=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2013\/02\/photo.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1911\" title=\"photo\" src=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2013\/02\/photo.jpg\" alt=\"\" width=\"640\" height=\"480\" srcset=\"https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2013\/02\/photo.jpg 640w, https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2013\/02\/photo-300x225.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>It is scrumptious. \u00a0In fact, the other day, I was serving it to Jon for lunch and he said, &#8220;I&#8217;m eating the best salad ever today.&#8221; \u00a0When I said that he&#8217;d probably get something better if, I don&#8217;t know, Thomas Keller or someone like that was cooking, he said, &#8220;No, I don&#8217;t think so.&#8221;<\/p>\n<p>This proves two things: \u00a01) \u00a0My husband is partial to me and complimentary, too. \u00a02) \u00a0This is a pretty awesome salad.<\/p>\n<p>I got the idea for this salad from the book,\u00a0<a href=\"http:\/\/www.amazon.com\/Salad-Dinner-Complete-Meals-Seasons\/dp\/0847838250\">Salad for Dinner<\/a>, by Jeanne Kelley. \u00a0If you have the chance, I urge you to take a look at her cookbook. \u00a0Every recipe I&#8217;ve tried from it so far has been stellar. \u00a0Truly.<\/p>\n<p>The following salad was taken from there with some substitutions. \u00a0First off, dates are used as the fruit in the original recipe. \u00a0I like dates but didn&#8217;t want to use them so I substituted dried cranberries. \u00a0The recipe also calls for pears. \u00a0I used apple, instead. \u00a0Also, I used pecans instead of walnuts.<\/p>\n<p><em>Ingredients:<\/em><\/p>\n<p><em>1\/2 cup farro, prepared according to package instructions<\/em><\/p>\n<p><em>1\/3 cup dried cranberries<\/em><\/p>\n<p><em>1 cored and sliced apple (fuji, gala, pink lady&#8230;they&#8217;d all be great)<\/em><\/p>\n<p><em>2 strips bacon, cooked until crispy and drippings saved<\/em><\/p>\n<p><em>1\/3 cup toasted pecan halves<\/em><\/p>\n<p><em>shaved parmesan to taste<\/em><\/p>\n<p><em>mixed salad greens (4-5 cups? \u00a0I never measure)<\/em><\/p>\n<p><em>Balsamic Vinaigrette (2 Tablespoons Balsamic Vinegar, 1\/4 cup extra virgin olive oil, 1\/4 t. salt, freshly ground pepper)<\/em><\/p>\n<p>Method:<\/p>\n<p>Cook the bacon and save the drippings. \u00a0Prepare the farro according to package directions. \u00a0Then, pour about 1-2 tablespoons of the bacon drippings over the cooked farro and stir it over medium heat until it looks slightly toasted. \u00a0Let it cool a bit as you prepare the rest of the salad. \u00a0I make my own salad dressing by taste, and I usually do it in the bowl that I&#8217;ll be mixing the salad in because I typically use as few dishes as possible. \u00a0It is a hold over from living without a dishwasher. \u00a0Anyway, on top of the dressing, add the lettuce, the apple, the pecans and the cranberries. \u00a0Toss to coat. \u00a0Add the farro and toss some more. \u00a0Divide between the plates (serves about 2 dinner-sized salads&#8230;about 4 big side salads) and top with the bacon and shaved parmesan.<\/p>\n<p>Extra stuff: \u00a0I sometimes make this with thinly sliced red onion or shallot. \u00a0Also, you can include a pressed garlic clove in the vinaigrette, if you want. \u00a0I usually don&#8217;t do either of the above when I&#8217;m making the salad for lunch. \u00a0Additionally, you can use the same skillet to make the bacon and toast the farro.
