{"id":1814,"date":"2012-10-01T18:15:52","date_gmt":"2012-10-01T18:15:52","guid":{"rendered":"http:\/\/www.annbarlow.com\/?p=1814"},"modified":"2012-10-02T00:17:00","modified_gmt":"2012-10-02T00:17:00","slug":"indonesian-slaw-salad","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1814","title":{"rendered":"Indonesian Slaw Salad"},"content":{"rendered":"<p>This is a great meal, y&#8217;all. \u00a0It is my adaptation of a salad in the wonderful book, <a href=\"http:\/\/www.amazon.com\/Salad-Dinner-Complete-Meals-Seasons\/dp\/0847838250\">Salad for Dinner<\/a>, by Jeanne Kelley.<\/p>\n<p><a href=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/10\/salad.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-1815\" title=\"salad\" src=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/10\/salad-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/10\/salad-300x300.jpg 300w, https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/10\/salad-150x150.jpg 150w, https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/10\/salad.jpg 612w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>This salad is wonderful and has spicy, sweet, and savory elements and lots of crunch, thanks to the cabbage. \u00a0I think that it is a nice departure from lettuce and a good thing to make if the greens at the store are lacking. \u00a0I usually make it for Jon and me to have for lunch. \u00a0So, my boys don&#8217;t eat it &#8212; but then I haven&#8217;t given them the chance. \u00a0James is happy when I make it, though, because the ingredients list contains Sriracha sauce which he uses to flavor everything from rice to grilled cheese sandwiches. \u00a0Crazy boy. \u00a0Anyway, when I intend to have it over several days, I just make a whole recipe of the salad and dressing and divide it accordingly &#8212; saving the chopping of the cabbage and cilantro. \u00a0The dressing becomes more assertive by the day, but since it is already sort of assertive, I don&#8217;t think that is really a big thing.<\/p>\n<p>And, we&#8217;re off.<\/p>\n<p><em>Spicy Peanut Dressing:<\/em><\/p>\n<p>1\/3 cup natural-style crunchy (or regular) peanut butter<\/p>\n<p>1\/3 cup natural rice wine vinegar<\/p>\n<p>2 Tablespoons soy sauce<\/p>\n<p>2 Tablespoons organic sugar (or use golden brown and pack it)<\/p>\n<p>1 Tablespoon Sriracha sauce<\/p>\n<p>1 large garlic clove, pressed<\/p>\n<p>&nbsp;<\/p>\n<p><em>Slaw:<\/em><\/p>\n<p>1 medium head cabbage, thinly sliced<\/p>\n<p>1\/2 can pineapple in juice, juice discarded and the pieces chopped into smaller bits<\/p>\n<p>2 carrots, peeled and grated<\/p>\n<p>1 sliced red or yellow bell pepper thinly sliced (optional)<\/p>\n<p>4 thinly sliced green onions<\/p>\n<p>1\/2 cup chopped cilantro<\/p>\n<p>1 &#8211; 2 cups leftover shredded chicken (or you can do a pound of shredded rotisserie)<\/p>\n<p>1\/2 cup chopped roasted and salted peanuts<\/p>\n<p>&nbsp;<\/p>\n<p>Whisk all the dressing ingredients together and season with salt to taste, if needed.<\/p>\n<p>In a large bowl, combine the cabbage, pineapple, carrots, red\/yellow bell pepper, green onions and cilantro. \u00a0(If you&#8217;re making the whole recipe ahead, up to this point can be done 8 hours in advance.)<\/p>\n<p>Add the shredded chicken and dressing to the cabbage mixture and toss to combine. \u00a0Season the slaw to taste with salt. \u00a0Sprinkle with peanuts and serve.<\/p>\n<p>Happy Monday and Happy 1st of October, y&#8217;all!<\/p>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>This is a great meal, y&#8217;all. \u00a0It is my adaptation of a salad in the wonderful book, Salad for Dinner, by Jeanne Kelley.
