{"id":1642,"date":"2012-03-29T20:12:30","date_gmt":"2012-03-29T20:12:30","guid":{"rendered":"http:\/\/www.annbarlow.com\/?p=1642"},"modified":"2012-03-29T20:12:30","modified_gmt":"2012-03-29T20:12:30","slug":"my-rice","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1642","title":{"rendered":"My Rice"},"content":{"rendered":"<p><span style=\"color: #0000ee;\"><span style=\"color: #000000;\">\u00a0<a href=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/03\/IMG_70071.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-1650\" title=\"IMG_7007\" src=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/03\/IMG_70071-1024x768.jpg\" alt=\"\" width=\"620\" height=\"465\" srcset=\"https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/03\/IMG_70071-1024x768.jpg 1024w, https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2012\/03\/IMG_70071-300x224.jpg 300w\" sizes=\"(max-width: 620px) 100vw, 620px\" \/><\/a><\/span><\/span><\/p>\n<p>I don&#8217;t think that this qualifies as a recipe, really, but it is what I frequently eat for lunch. \u00a0When I make this rice, someone in my family always says, &#8220;What smells so good in here?&#8221;<\/p>\n<p>I don&#8217;t measure when I make this, so these are general guidelines. \u00a0Try it if you like rice, spinach, eggs&#8230;..and a hot lunch vs. a cold one.<\/p>\n<div>\u00a0You will need:<\/div>\n<div>\n<ul>\n<li>1-2 cups cooked, leftover rice \u00a0(I like this with basmati and brown, though any kind will be delicious.)<\/li>\n<li>1 &#8211; 2 T. oil (I use either coconut or extra virgin olive, though I suppose any kind would be fine.)<\/li>\n<li>1 -2 cloves minced or sliced garlic (I usually slice mine and then remove it later. \u00a0Of course, \u00a0I always miss some pieces and end up eating a few anyway, so I don&#8217;t know why I bother.)<\/li>\n<li>1 T. grated fresh ginger if \u00a0you have it (I often don&#8217;t&#8230;.but it is tasty)<\/li>\n<li>frozen spinach (of course you could use fresh, but I usually don&#8217;t since I can get frozen pesticide-free spinach cheaply.)<\/li>\n<li>1 &#8211; 2 T. soy sauce or tamari<\/li>\n<li>1 &#8211; 2 eggs<\/li>\n<li>toasted sesame oil for drizzling<\/li>\n<\/ul>\n<\/div>\n<div><\/div>\n<div>Put the spinach in a microwave-safe bowl and nuke it in the microwave until it thaws. \u00a0This usually takes 2 minutes in my microwave. \u00a0Times will vary for type of microwave that you use and, of course, with the amount of spinach. \u00a0Squeeze the spinach to rid it of excess water. \u00a0Set aside.\u00a0While you&#8217;re nuking your spinach, put a large frying pan or skillet (I use my big cast iron one) over medium low heat. \u00a0Add the oil and saute the garlic (and the ginger, if using) until it softens. \u00a0Don&#8217;t let it brown. \u00a0After a minute or so, add the rice and stir it all together really well. \u00a0Continue stirring on an off for a few minutes until rice is warm. \u00a0(You might want to up the temperature a bit, at this point.) \u00a0Add the spinach to the skillet and stir again. \u00a0Cook for another minute or so or until spinach is warm. \u00a0Drizzle the rice\/spinach with the soy sauce and stir to distribute. \u00a0Remove pan from heat. \u00a0In another skillet, (or in the same one if, like me, you prefer using the fewest pots possible) scramble the egg(s) using a little more oil. \u00a0(If you use the same skillet as you did for the rice, put the rice in a serving bowl and wipe out the skillet before continuing with the egg scrambling.) \u00a0When the eggs are done, toss the rice mixture with the eggs to combine. \u00a0Serve immediately drizzled with a bit of toasted sesame oil.<\/div>\n<div><\/div>\n<div>Oh, and I also make this without the eggs sometimes when I&#8217;m aiming to make lunch for several days. \u00a0The rice mixture reheats really well and is yummy topped with a fried egg instead of scrambled. \u00a0If you do it this way, I suggest topping each portion with toasted sesame oil on the day that you eat it instead of when you initially make the rice.<\/div>\n<div><\/div>\n<div>Okay, that&#8217;s it.<\/div>\n<div><\/div>\n<div>I hope that y&#8217;all are having a good Thursday!<\/div>\n<div><\/div>\n<div><\/div>\n<div><\/div>\n<div><\/div>\n<div><\/div>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>\u00a0 I don&#8217;t think that this qualifies as a recipe, really, but it is what I frequently eat for lunch. \u00a0When I make this rice, someone in my family always says, &#8220;What smells so good in here?&#8221;
