{"id":1520,"date":"2011-12-15T19:58:56","date_gmt":"2011-12-15T19:58:56","guid":{"rendered":"http:\/\/www.annbarlow.com\/?p=1520"},"modified":"2011-12-15T19:58:56","modified_gmt":"2011-12-15T19:58:56","slug":"my-soup","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1520","title":{"rendered":"My Soup"},"content":{"rendered":"<p>I think that I&#8217;ve spoken more than once on here about my crummy diet. \u00a0This diet is one for health and not (necessarily) one that will help with weight reduction, etc. \u00a0When I first started, I&#8217;d have to admit that I was feeling sort of deprived. \u00a0I missed sugar, I missed flour, I was a lunatic dreaming about peanut butter.<\/p>\n<p>All of that faded significantly when I ran across the recipe for this soup.<\/p>\n<p>This recipe is adapted from one of Heidi Swansons&#8217; recipes. \u00a0Sadly, I don&#8217;t remember the specific cookbook&#8230;.maybe it was <em>Super Natural Cooking<\/em>. \u00a0Have y&#8217;all been to Heidi&#8217;s site? \u00a0I think that every food lover on the internet has probably visited over there &#8212; but, just in case you haven&#8217;t &#8212; please visit her beautiful blog and recipe site, at <a href=\"http:\/\/www.101cookbooks.com\/index.html\">www.101cookbooks.com<\/a>. \u00a0She is a wonderful photographer in addition to all of the artistry that she employs in putting together her simply wonderful recipes. \u00a0Check out her cookbooks, too. \u00a0They are probably at your library.<\/p>\n<p>But back to the soup.<\/p>\n<p>This soup has most of my favorite things in it &#8212; so it is a winner all around for me. \u00a0I love curry. \u00a0I love coconut milk. \u00a0I love coconut oil. \u00a0I love wild rice. \u00a0I love red curry paste and tamari and sweet potatoes. \u00a0So, when all of these loves come together in one soup then I&#8217;m a very happy girl.<\/p>\n<p>&nbsp;<\/p>\n<p><a style=\"text-decoration: none;\" href=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2011\/12\/IMG_6863.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-1521\" title=\"IMG_6863\" src=\"http:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2011\/12\/IMG_6863-300x224.jpg\" alt=\"\" width=\"300\" height=\"224\" srcset=\"https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2011\/12\/IMG_6863-300x224.jpg 300w, https:\/\/www.annbarlow.com\/wordpress\/wp-content\/uploads\/2011\/12\/IMG_6863-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Creamy Wild Rice Soup with Sweet Potato Croutons<\/strong><\/em><\/p>\n<ul>\n<li>1 cup rinsed wild rice (not wild rice mix! \u00a0You should have only the black rice grains and nothing else&#8230;it won&#8217;t work with a blend.)<\/li>\n<li>1 chopped yellow onion<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>1 T. coconut oil<\/li>\n<li>4 cups of water, divided (you may need more)<\/li>\n<li>1 1\/2 T. red curry paste<\/li>\n<li>1 can coconut milk<\/li>\n<li>1 T. curry powder<\/li>\n<li>1 t. salt<\/li>\n<li>1 T. sweeetner (stick with something mild like natural cane sugar or agave nectar)<\/li>\n<li>1 T. tamari or soy sauce<\/li>\n<li>Cubed roasted (in coconut oil, seasoned with salt and pepper) sweet potatoes for garnish. \u00a0(I usually do 3 pounds or so, but that&#8217;s just to save time making more later and it provides extra &#8212; for snacking!
