{"id":1451,"date":"2011-11-01T17:34:11","date_gmt":"2011-11-01T17:34:11","guid":{"rendered":"http:\/\/www.annbarlow.com\/?p=1451"},"modified":"2011-11-01T18:07:49","modified_gmt":"2011-11-01T18:07:49","slug":"speaking-of-brown-butter","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1451","title":{"rendered":"Speaking of Brown Butter&#8230;."},"content":{"rendered":"<p>it totally rocks a bowl of oatmeal.<\/p>\n<p>But, before I tell you the recipe, I have to back up a little.<\/p>\n<p>I love LOVE pumpkin bread. \u00a0But, as I&#8217;ve mentioned on here before, I&#8217;m on a crummy diet. \u00a0On this diet, gluten is not allowed. \u00a0Milk is not allowed. \u00a0Sugar is not allowed. \u00a0See, totally crummy. \u00a0Except, a little bit of butter is allowed per day. \u00a0And so, one day as I was eating my oatmeal while missing (mourning the lack of ) pumpkin bread, I got the idea to make myself some pumpkin bread (minus the bread) oatmeal. \u00a0And I decided to put my little bit of butter that I can have each day on the top.<\/p>\n<p>I use steel cut oats for this recipe. \u00a0Every Sunday night \u00a0I make myself a batch to carry me though the week. \u00a0Then I can enjoy hot breakfast for a week and have to only wash the pan once. \u00a0Win, win. \u00a0I use around 1\/3 cup of these plain, cooked oats and mix in whatever I want for that particular day. \u00a0If it is a day that I want pumpkin, then the ingredients and proportions look sort of like this:<\/p>\n<p>1\/3 cup cooked steel cut oatmeal<\/p>\n<p>2 T. or more toasted nuts (pecans and walnuts are great)<\/p>\n<p>1\/4 cup dried cranberries or raisins<\/p>\n<p>1\/4 cup pumpkin puree<\/p>\n<p>dash cinnamon<\/p>\n<p>drizzle of maple syrup (I usually don&#8217;t do this because I don&#8217;t like sugar in the morning&#8230;it tastes great with these flavors, though)<\/p>\n<p>drizzle of browned butter<\/p>\n<p>splash of almond milk, if needed<\/p>\n<p>So, put the pumpkin, oatmeal, dried fruit, cinnamon and almond milk (if desired) in a bowl. \u00a0Warm \u00a0in the microwave for a few minutes. \u00a0Stir it a few times during heating. \u00a0Remove from the microwave and top with the nuts, brown butter and maple syrup.<\/p>\n<p>&nbsp;<\/p>\n<p>Happy first of November, y&#8217;all!<\/p>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>it totally rocks a bowl of oatmeal.
