{"id":1377,"date":"2011-08-10T01:51:27","date_gmt":"2011-08-10T01:51:27","guid":{"rendered":"http:\/\/www.annbarlow.com\/?p=1377"},"modified":"2011-08-10T03:58:49","modified_gmt":"2011-08-10T03:58:49","slug":"waffles","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1377","title":{"rendered":"Waffles"},"content":{"rendered":"<p>I&#8217;ve been making homemade waffles lately for the boys to eat for breakfast.<\/p>\n<p>Now, I&#8217;ve mentioned here before about how cooking is a coping mechanism for me. \u00a0There are many unknown things in life, right? \u00a0There is so much that we cannot control &#8212; things we can neither anticipate or perhaps even deal with when they land in our laps. \u00a0This plays right into my slogan&#8230;<\/p>\n<p><strong><em>Life is Messy, Y&#8217;all. <\/em><\/strong><\/p>\n<p><strong><em><\/em><\/strong>(I think I should print this up on bumper stickers&#8230;)<\/p>\n<p>So, what can I do? \u00a0Well, I can fry chicken. \u00a0I can bake (but not now in the blazing heat). \u00a0So I compensate for not baking by making waffles.<\/p>\n<p>These waffles are a hit with my boys. \u00a0My 3rd son, C, even asked if we could only have these waffles in the future. \u00a0That was a sweet compliment, as I told him at the time, but not very realistic. \u00a0You see, the winds of change are a&#8217;blowing, as they say, and in 2 weeks I&#8217;ll have 4 boys in 4 different schools. \u00a0I&#8217;ll also be doing a little job of my own, at yet another school. \u00a0So, promising homemade every time didn&#8217;t seem realistic to me. \u00a0These do freeze well, though, and if you make 1\/4 cup waffles &#8212; which will end \u00a0up about the same size as a store bought frozen one &#8212; you will end up with 24 or so.<\/p>\n<p><strong>Waffles<\/strong><\/p>\n<p>2 1\/4 cups all purpose flour<\/p>\n<p>1 t. baking soda<\/p>\n<p>1 t. baking powder<\/p>\n<p>1\/2 t. salt<\/p>\n<p>1\/4 cup butter or oil<\/p>\n<p>1\/4 brown or white sugar<\/p>\n<p>3 egg yolks<\/p>\n<p>2 cups buttermilk<\/p>\n<p>3 egg whites<\/p>\n<p>Method:<\/p>\n<p>Sift dry ingredients together into a smallish bowl. \u00a0Cream butter and sugar in the bowl of a mixer until fluffy. \u00a0Add 3 egg yolks and mix until incorporated. \u00a0Add the buttermilk and sifted flour mixture to the egg\/butter\/sugar mixture alternating 3 times between dry and wet. \u00a0Scrape down bowl and mix a bit more. \u00a0In another bowl, using whisk attachment, beat the egg whites until they are stiff but not dry. \u00a0(I can do this easily because my husband snagged an extra kitchenaid mixer bowl from the curb a few years ago. \u00a0Isn&#8217;t he awesome?) \u00a0Fold the egg whites into the batter mixture until no white streaks remain.<\/p>\n<p>Pour onto the waffle iron using 1\/4 &#8211; 1\/3 cup measure. \u00a0Cook until golden brown.<\/p>\n<p>Happy eating, y&#8217;all!<\/p>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve been making homemade waffles lately for the boys to eat for breakfast.
