{"id":1292,"date":"2011-07-22T15:22:40","date_gmt":"2011-07-22T15:22:40","guid":{"rendered":"http:\/\/www.annbarlow.com\/?p=1292"},"modified":"2011-07-22T15:22:40","modified_gmt":"2011-07-22T15:22:40","slug":"too-hot-to-cook","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1292","title":{"rendered":"Too Hot to Cook"},"content":{"rendered":"<p>Our poor air conditioner just can&#8217;t keep up with this 100 degree heat. \u00a0Yes, it is\u00a0cooler inside, but below 80 it just won&#8217;t go.<\/p>\n<p>This means that I&#8217;ve not been using my oven lately &#8212; except for some chocolate cupcakes the other day. \u00a0That might have caused a one degree rise in temperature but I didn&#8217;t notice because I was eating a yummy treat. \u00a0The power of chocolate; it&#8217;s a wonder. \u00a0In my day to day meal preparation, I&#8217;ve been using my slow cooker for everything. \u00a0I was sort of a slow cooker snob before, I&#8217;ll admit it, but the heat has made me seek options to feed these hungry people. \u00a0The upshot is that I now have several great new recipes for the slow cooker&#8230;so perhaps I should be grateful for the inspiration that the summer has provided.<\/p>\n<p>I&#8217;ve also been seeking recipes that I could make with no cooking at all. \u00a0The other day I saw this delicious chicken salad on <a href=\"http:\/\/threemanycooks.com\/recipes\/soups-and-salads\/apricot-chicken-salad-with-basil-and-almonds\/\">Three Many Cooks<\/a> and I knew that I would be making it soon. \u00a0The ingredients include apricots, apricot jam, basil, almonds, cream cheese, scallions, lime juice, the meat from a rotisserie chicken. \u00a0I can&#8217;t wait to try it. \u00a0You should too, if the ingredients sound like something you&#8217;d like. \u00a0The Three Many Cooks recipes are always spot on. \u00a0It&#8217;s nice when a recipe isn&#8217;t a gamble.<\/p>\n<p>Happy (hot) Friday, y&#8217;all!<\/p>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>Our poor air conditioner just can&#8217;t keep up with this 100 degree heat. \u00a0Yes, it is\u00a0cooler inside, but below 80 it just won&#8217;t go.
