{"id":1076,"date":"2010-09-30T13:16:00","date_gmt":"2010-09-30T13:16:00","guid":{"rendered":""},"modified":"2011-07-16T11:17:28","modified_gmt":"2011-07-16T11:17:28","slug":"","status":"publish","type":"post","link":"https:\/\/www.annbarlow.com\/?p=1076","title":{"rendered":"Another Excellent Sandwich"},"content":{"rendered":"<p><b>Another Excellent Sandwich<\/b><br \/>\ncan be found <a href=\"http:\/\/threemanycooks.com\/recipes\/vegetarians-only\/meatless-muffalettas\/ \n\">here<\/a>.  <\/p>\n<p>This recipe is from <a href=\"http:\/\/threemanycooks.com\/\">Three Many Cooks<\/a> which is one of my favorite cooking blogs.  Of course, I tweaked the recipe to suit my likes\/dislikes.  I made these a couple of weekends ago while my parents were visiting and we all really enjoyed them.  Here&#8217;s my version:<\/p>\n<p>Meatless Muffalettas <\/p>\n<p>2 or so cloves garlic<br \/>\n1\/4 cup capers<br \/>\n1 cup black olives<br \/>\n1 cup pimento-stuffed green olives<br \/>\n2 T. red wine vinegar<br \/>\n2 t. dried oregano<br \/>\n1\/2 cup extra virgin olive oil<\/p>\n<p>Mince the garlic and then capers in a food processor.  Add the remaining ingredients and pulse to chop it up.  This can be stored in the fridge for several weeks.  <\/p>\n<p>When you&#8217;re ready to assemble the sandwiches take the bread of your choice (even hoagie rolls will do&#8211; this from the bread snob known as Annie) and spread one side with olive salad.  Top this with a couple of different cheeses (I used pepper jack and provolone &#8212; I think that sliced mozzarella would be good and I really would love to try it with fresh mozzarella, also).  You should also add some  quartered artichoke hearts and some red onion (if you like it).
